Before diving into the techniques, it’s important to distinguish between sharpening and honing:


  • Sharpening involves grinding the blade to create a new edge. This process removes material from the knife and is necessary when the blade becomes dull.

  • Honing realigns the blade's existing edge, which may have become slightly bent or misaligned with use. It does not remove material and should be done more frequently than sharpening.


How to Sharpen a Knife


To sharpen a knife, you'll need:

  • A double-sided sharpening stone (whetstone) with coarse and fine grit sides

  • A bowl of water or honing oil (depending on the type of stone)

  • A clean cloth for drying

  • Knife


Steps for Sharpening

  1. Prepare the Stone: If using a water stone, soak it in water for about 10 minutes until no bubbles appear. If using an oil stone, apply a small amount of honing oil to the surface.

  2. Determine the Angle: A sharpening angle of 15 to 20 degrees is ideal for most kitchen and butchering knives. An angle guide can help maintain consistency.

  3. Begin Sharpening: Hold the knife at the correct angle against the coarse side of the stone. Starting at the blade's heel, gently draw the knife along the stone in a sweeping motion toward the tip. Apply even pressure and ensure the entire edge makes contact with the stone.

  4. Repeat on the Other Side: Flip the knife and repeat the process on the other side, maintaining the same angle and pressure.

  5. Switch to Fine Grit: Once both sides are sharpened on the coarse grit, repeat the process on the fine grit side to refine the edge.

  6. Clean and Dry: After sharpening, rinse the knife under running water to remove any metal filings. Dry the knife thoroughly with a clean cloth.


How to Hone a Knife

  • Knife


Steps for Honing

  1. Hold the Rod Vertically: Place the tip of the honing rod on a stable surface and hold it vertically.

  2. Set the Angle: Hold the knife at 15—to 20 degrees against the honing rod.

  3. Hone the Edge: Starting at the base of the knife blade, draw the knife down and across the rod, maintaining the angle. This motion should move from the heel to the tip of the blade.

  4. Alternate Sides: Repeat the motion on the other side of the blade, alternating sides for several strokes.
