If you're like me, your always looking for easy ways to make your own things. As tricky as office furniture, or as easy as your unique spin on recipes, I like doing things my way. It comes as no surprise that with as much coffee creamer we go through, and the endless amount of additives that get added into a lot of the stuff on the market today, I wanted to try making my own.
Over the last several years, I've made several different kinds -- flavored, unflavored, keto, non- dairy, you name it. Some of them have been amazing, others, well, not so amazing.
The good news is, I've ditched the recipes that didn't make the cut and here to bring you my ultimate favorite. To make it easier, I've linked to the specific ingredients in this article, but know that many of these things can be purchased in your local stores.
Ingredients:
2 cans of Organic Coconut Milk
1 32 oz carton of unsweetened Coconut Milk
6-8 whole, pitted dates
1 tsp of cinnamon
4-8 scoops of Stevia (use will depend on your preference)
1 ½ TBSP Vanilla Extract
If you are following a Keto diet, you can also add in MCT oil or powder here is the link to the one I use: Wild C8.
Instructions:
1. Get out a medium or large pot and whisk all the ingredients together.
2. Turn heat to medium-high and bring to a boil, then return to a simmer and whisk often. Simmer for a total of 15 minutes.
3. When done, remove from heat and let it sit until it has cooled. Then pour into a blender and whip thoroughly. (If you use pitted dates you can leave them in and blend up, or remove if you prefer).
4. Store in a glass container in the refrigerator and ENJOY.
You can change the flavor to match the season by adding different spices. Try cloves, nutmeg, pumpkin spice, or peppermint for the holidays. You can also use different extracts if you'd like (almond, hazelnut, peppermint, or coconut are good, too).
